Emeril's homemade mayonnaise recipe?
I tried to make it but it came out thin and nasty. I did use a blender and not a Cuisinart style food processor, but otherwise followed the recipe to a t. Any other ideas about what went wrong?
Recipe:
1 large egg
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
2 cups olive oil
Salt and freshly ground pepper to taste
In a food processor or blender, blend the egg, mustard, and lemon juice together for 20 seconds. With the machine running, slowly pour in the oil in the feed tube. The mixture will thicken. Season with the salt and pepper and pulse once or twice to blend.
There is a trick to making it. I would change the recipe to to two egg yolks (no whites) and only use 1 1/2 cup of oil.
The trick is to emulsify the egg yolk and mustard with the oil. After you mix the egg yolk and mustard (leave the lemon juice out till the end) put the blender on high pour in very little oil and blend until you can't see it any more, the mixture be one color, with no visible oil. Now you add a little more and repeat. You can add more and more oil each addition, but start very slowly. When it's done add the salt pepper and lemon juice and pulse it in. The trick is all in getting the emulsification started slowly in the beginning.
Try it again, you will love homemade mayo, and then you can add more mustard and some honey and get honey mustard dressing, or make dill mayo for dipping vegies in. Lots of great recipes can come from homemade mayo.
I already have a Cuisinart 7 speed Blender, can I buy just the food processor top?
I have noticed now that a lot of places are selling the Cuisinart blender with a food processor top that comes with it. So you can either change it to the blender or the food processor, only by changing the container, and you still keep the same base. Is there something like that, that I can just add on or buy, since i already have the actual blender?
For example: http://cgi.ebay.com/Cuisinart-CB-600FP-BLACK-DUET-Blender-Food-Processor_W0QQitemZ330271598771QQcmdZViewItemQQptZSmall_Kitchen_Appliances_US?hash=item330271598771&_trksid=p3286.c0.m14&_trkparms=72%3A1205%7C66%3A2%7C65%3A12%7C39%3A1%7C240%3A1318
This has both and I only need the additional food processor, but I have the base.
Any ideas?
I searched on the Cuisinart site and apparently they don't have a food processor top for that model. These are the only parts that come along with it:
http://www.cuisinart.com/parts_accessories/parts.php?product_id=2&item_id=7&cat_id=1
However, they do have a food processor/blender that is not that much, $79.95...if you want to recycle your blender and get it:

Wany to buy a good, reasonably priced food processor...?
...that is not obnoxiously loud. I have the Cuisinart blender/processor combo which is a little small for what I need, not to mention horribly loud. Anyone have a recommendation?
Kitchen Aid KFP710 was Consumer Reports "Best Buy" at $80. It looks like just about any Kitchen Aid or Cuisinart should be good and scored as being very quiet.
Do you use your Cuisinart Smart Stick Hand Blender chopper/grinder attachment to grind coffee beans?
With 200 watts of power, I would think that you could, but its not mentioned in the instruction booklet. It also said that some spices would scratch the prep bowl, I assume that's nutmeg?
If you want to grind coffee beans, I recommend buying an inexpensive spice grinder. They run abut $20 and are quite handy. I've use them for over 20 years to grind coffee.
Hope this helps!

Blender/ Food Processor combo...?
Anyone own one? I have seen the Black & Decker ($50) and the one from Cuisinart ($80). I am looking for comments or feedback from either.
YES... I have one... they are made by OSTER, and I bought it about a month ago when Wal-Mart had them on sale for $37 and I LOVE it. I have a full sized Cuisinart and I like that small bowl on the Oster so much more that I never use the big food processor any more for other than large amounts.
