Does anyone have or use the Braun Skim Milk Disc? Is there anything else out there like it?

My Braun Handblender (immersion style) is OLD (like 20 years old) but still works great and I absolutely LOVE the skim milk disc - you can whip skim milk into a thick, rich froth (I can trick the kids into thinking it's whipped cream). I mean, it is REALLY rich and thick. I can easily use it in place of whipped cream (for a topping only - doesn't stand up to folding) and not miss the real thing.

I'm afraid my blender may die someday and I won't be able to use the disc (it only fits old models). Are there any new appliances that will whip skim milk like that?

Yams would not cook..why?

I usually have no problems with using this cooking method, but today...of all days, forget about it. I peeled and cut up some yams (into small pieces) and boiled them until they'd be soft, so i could drain and mash them up. Well..after 45 minutes at a rolling boil, I drained the yams and poked a few with a fork...ROCK HARD. So I then reboiled some more water, returned the yam chunks to the large pot..and cooked them for another 45 or so minutes. Again, ROCK HARD. I drained them for a second time and transferred them in batches to a microwave dish, and nuked them for 10 minutes per bowl. I plopped the nuked yams into a large mixing bowl and used an immersion blender to whip them up. WRONG...they were the consistency of raw (yet hot) yams that I had chopped in a food processor and added butter and cream to the crunchy bits. The dish was ruined, and we had to go without the yams this year. I've never had this happen to me before. Is there a logical reason for these things not cooking, even though they'd been boiled for nearly 2 hours and then microwaved for a total of 30 minutes (3 bowls, 10 minutes per bowl.)


Weird. I wonder if your yams were old, or if the cooking water might be heavily mineralized. Sometimes I had trouble cooking beans and legumes in Utah because of the hard tap water. Other than that, I'm not sure what would cause them to resist cooking like that.

I have a cuisinart that is not only an immersion blender but also has a small wire whisk attachment that is great for making whipped cream and a chopper attachment. I love it and use it all the time.

how about a $15 gift certificate at his favorite kitchen gadget store? I am a cook and I don't like other people buying me stuff as then I feel obligated to use it even if I think it is a useless kitchen dust collection toy. Anothe suggestion would b a copy of a cook book he doesn't already have.

how can i make a simple dessert foam?

i was told to add a bit of lecithin, but in what form do i buy it and how much do i use? i don't want to make very fine bubbles like a whipped cream but light airy bubbles that will hold a little bit. i don't have a foamer i only have an immersion blender so how do i do that with some milk or cream. any help in doing so would be greatly thanked.


lecithin is an emulsifier, usually in egg yolks.

my first answer is whip some cream over a bowl of ice. then when it forms soft peaks, add some sugar and whip some more. just be careful not to over whip it, as it will turn into butter and split into butter and buttermilk.

next thing is like a tiramisu. whip egg whites until foamy then fold (not mixing, folding is using rubber spatula to fold in a circular motion to avoid popping the bubbles) in a cream based mixture like whipped mascarpone cheese with sugar and yolk.

Do You Need an Immersion Blender?

Have you ever scan through an incredible recipe only to get to the part where it says to transfer portions of the heated food into a edibles processor or blender and decide it’s not worth the effort?  Well, I have done that on more than one occasion.  Think of all of the incredible, creamy soups I’ve been missing out on all this time?  I received the Braun MR430HC Multiquick Deluxe Transfer Blender & Chopper and have found pureeing soups to now be the easiest task with this kitchen appliance.

The hand blender is easy to assemble without reading the instructions.  Once plugged in, you just place the end with the blade into the soup and press the green button.  It will only mixture while the button is pushed, which I think is a great idea.  If you were keep the power on while lifting it in full out of the hot liquid you would not only have a mess on your hands, but it could also  burn your body or someone else’s. 

The pieces move along disintegrate apart as easily as they are attached for quick and easy cleaning.  This scullery tool is not over-sized so it will not take up as much room in your kitchen as a blender, which is a definite plus for those people who are already penniless on storage space.

The immersion blender is not a one-trick pony by any means.  It can also be used to redress smoothies or even whipping egg whites, and this model comes with it’s own cup for measuring your ingredients and then blending.  It can also be cast-off as a mini-chopper rather than pulling out your food processor.
