How do you deep fry catfish, and what kind of oil do you use?

Hi, I've always loved catfish but have never made it myself. I got a deep fryer for Christmas and want to use it to make catfish. I bought the fillets and I know to use cornmeal breading.
But beyond that I really don't know how to cook it. What temperature do I heat the oil to? And what kind of oil do you use? How long do you fry the fish?

I work in a fish and chip shop and almost all of my work involves lifting, twisting etc. Scooping ice creams is the real killer I think, also lifting fryer baskets full of food and tipping them onto paper. I want to wear some kind of brace but my job involves having my arm submerged in water relatively often, and the only braces I've seen are not waterproof. I was thinking I could do some exercises to strengthen my wrist but don't really know any, any other suggestions are more than welcome!
buy the brace you have seen and wear one of the industrial sized rubber gloved over the top!

As a fisherman I just purchased a Fry Daddy deep fryer to cook my catch and I need to know which is the best/healthiest oil to use for my fish fry?
well olive oil has lots of fat in it but good fat as long as you dont eat too much of it- omega three fattty acids. It is also supposed to be good for your heart. The healthiest oils are low in saturated fats - such as canola oil or peanut oil. I would go with peanut or canola - they can sustain higher temps better than olive oil

how can i make my house smell less like food when cooking?

when i cook i love cooking with onions, i cook fish, also use a fryer and all that stuff that leaves your house smelling like oil,onion,fish ,and all that smelly stuff so how can i diminish the smell? i use candles, air fresheners, sprays and ll windows and doors open but i still keep the smell in the house for days after. is there anythign else i can do?
is it true that if i boil water and add cut lemons itll diminish smell?
picking up an air purifyer is the only thing i can comeup with if you have some money to spare

I have recently taken on a member of staff who is almost 16 and is now attending college after leaving school in June of this year. Is it legal for me to allow him to use the frying ranges in my chip shop. He is dyslexic and doesn't have much opportunity but is keen to learn. Unfortunately if he is unable to work with the fryers he isn't much use to me!!!
