Frozen yogurt nutrition?

I know that frozen yogurt does not have the same health benefits as the plain refrigerated stuff, because the "good" bacteria are killed- not to mention all the sugar, and probably preservatives, etc. that are in the commercial stuff.
*********But what if I made some at home, and ate it right from the ice cream maker?*******
I like it soft serve anyway, gets too hard if you keep it in the freezer. But does this still destroy any bacterial benefits I might get from the yogurt? The kind I buy is a store brand, with pre & probiotics in it. I also add honey when I make froyo.
It should kill the bacteria. Because, practically it is the same thing from the store but u arent getting it from the freezer (Being to hard) it is soft serve, so i think ur good :)

Really good rich and creamy RICE MlLK Ice Cream Recipes?

My husband wants to cut some of the dairy out of his diet but ice cream is his favorite desert (not to mention our son is less than 1yr old, so dairy is still a "No" for him), plus most of the ice cream on the market (even the expensive brands) now are made with corn syrup which we all try to avoid.
We have tried the Rice Dream Ice Cream and to me it was "meh" (didn't seem very creamy and rich to me - their soy ice cream was much better in this regard, but soy is not so good for me), and its very expensive. We are hoping to find a good recipe for rice milk that is rich and creamy and satisfying but healthier and not as expensive as the commercial products :)
If we can't find a good creamy recipe that only has rice milk in it, we will probably add some heavy whipping cream (but significantly less than the 4 cups that the ice cream maker recipe recommends!)
Possibly there is a brand of rice milk that is notably richer/creamier than others? That info would be appreciated also!

I have made a type with rice milk and basmati rice it is an Indian dessert called "Kulfi", by cooking the rice with sugar and saffron and water with a few spices (cardamom seed and cinnimon stick), and then heating the rice milk to a warmish temp you can thicken it with a tapioca slurry or I use sweet rice flour from Asian stores, then I take the the thicken rice milk, rice cooked with saffron and some ground almonds and a bit more rice milk and blend them all smooth.
I take this mixture and process it my Cuisinart Ice cream maker, it will thicken up like ice cream, then pack it in a tupperware carton to firm it up, I serve it with a bit of fresh chopped mango and some toasted slivered almond, in Indian sweet stores they will serve it with almonds/pistachios, rose flavoured syrup and a cooked vermicelli in syrup.
Now you can add some cream for a silkier texture when processing.

How can you make homemade ice cream easier to scoop?

I know that homemade ice cream is denser and harder to scoop than commercial because there is less air, and no cellulose gum or whatever chemicals they put in. Is there a way to incorporate more air while freezing?
I have an ice cream maker but the ice cream is only a good consistency for a few hours after being put in the freezer to "ripen"- it gets rock hard overnight when it freezes solid.
I also have a recipe for ice milk using gelatin- you dissolve it, then freeze till set (not fully frozen) and beat with an electric mixer. It gets real fluffy and stays scoop-able even after freezing for days. I know there is a lot of air in this kind, though- it doubles in volume when you beat it.
Is it possible to add air to the usual rich homemade ice-cream maker stuff by whipping in an elecric mixer after churning?
Yes, I'd think it'll be possible to incorporate more air with the help of a blender, they're the best for that.

How to stop Home Made Ice Cream from feezing Rock Solid?

I been making home made Ice Cream and when it comes out of the ice cream maker it is at the constancy of a gelato place. However once I put it in the freezer the next day it is rock solid. Some batches are really bad. I had one batch that after 24 hours sitting outside at room temperature it was still quite frozen.
I know commercial ice cream they put chemicals and crap in to make it from going solid but I figure there must be some techniques or natural ways to stop it from going rock solid.
Commercial ice cream makers pump air into the ice cream to keep it from going hard. It's called over-run. Home made is only good the day of. Check out this page.

I like ice cream but don't like the additives in commercial ones so I'm thinking of getting a home ice cream maker and so far like the look of the Cuisinart ICE bucket, and also looking at slightly cheaper Magimix and Kenwood.
There's not much written about them, and no reviews, so wondering if anyone has used either. About all I can gather is that, apart from how wonderful home made ice cream is, you need to pre freeze the bucket, which shouldn't be a problem.
I'm assuming I'll be able to transfer the mix when done, into a suitable container for storing in the freezer - even if only to stop me eating the lot in one go.
I have a cuisinart and I love it! My brother-in-law got us a rival hand crank one a few years back, but I won't part with my cuisinart. I have had it for quite some time and it hasn't failed me yet. Freeze the insert solid, make your ice cream mix and chill. Pour the mix into the insert, put the paddle in and 20 minutes later, soft serve. You can transfer it into a covered plastic container in the freezer for a harder ice cream. ( I gave away the hand crank rival to my sister, she has to add the rock salt and her daughter doesn't seem to mind the cranking.) BTW keep the freezer insert frozen all the time so whenever you want ice cream, it's ready to go.
