Question about Pressure canning?

I want to buy an electronic pressure cooker. Is it big enough for canning? I am scared to use an actual pressure canner and thought that a digital one will be safer.
I want to can meat

I have some black stains in my pressure cooker. What is the best way to remove them?

I have used my canner all summer and fall but would like to use it for some big soups I plan on making. I have tried SOS etc. It is aluminum and has apparently absorbed some of the acids etc from the fruits and veggies I did this year


You can't use Easy Off on aluminum, but you can use Dawn Release. Spray it on and let it sit. Then attack it w/ steel wool. If it still won't come off, my guess is it's safe to cook in. If chemicals and elbow grease won't get it off, a pot of soup won't either!

I want to cook a 7 lb chuck roast in a reynolds bag with vegetables. Will the vegetables be mush?

I have white potatoes and carrots from the garden, plus turnips and onions and celery. The chuck roast is almost 7 lb. The recipe from Reynolds says to add the vegetables in the beginning and cook a 3.5 lb roast for 3 hours. I am assuming my bigger roast (it is actually 2 roasts... from Costco) will take twice as long. Seems to me that 5 hours is a long time to cook vegetables. But you can't open the bag once you close it.

We were going to use the pressure cooker... neither of us has ever done this, and actually my pressure cooker is a CANNER so it is HUGE.... I can double stack pint jars in it. I think it would take forever to get it up to pressure with less than 1/3 of it filled with food.

So with 2 Chuck roasts, totalling almost 7 lbs, in the same bag, would they cook in 3 hours? or would they take double the time? Or maybe 1.5 times ... so 4.5 hours? I have never made this much roast at one time, and I want it to be something I don't have to babysit too much.

Cut the roast in half- Use two cooking bags. Divide the vegetables in half. Add a half of the roast and the half of vegetables,into each bag. For the cost of another cooking bag,you wont have to babysit your awsome roasts!

Where may I rent a pressure canner and is this different from a pressure cooker?

My fiance is in the Navy and sure would like some of my home cooked soups, meatballs and sauce etc...but the pressure canner is quite costly. Would love to be able to rent one for the weekend and cook up a storm and provide him with some home cooked love.


Check in your area for one of those places that rents stuff for parties, wedding and things like that. They have stoves, tables, chairs, dishes etc. There is no difference other than size. You just can't do small batches of stuff in the big ones. My wife bought an electric cooker and loves it.

Can I use a pressure cooker to preserve homemade sauce in jars and/or bottles?

I have made some homemade tomato ketchup, the recipe contains red wine vinegar and sugar. I want to store the sauce in bottles or jars to preserve it (Not long term, just over the next few months).

Everything I have read about canning is American and talks about a pressure canner. I have a pressure cooker, is it possible to can the sauce using this? If so how do I do it?


You just need to sterilise your jars by submerging them in boiling water. And please be careful about it (of course you use jars intended for this).
After you have done this, you put your hot ketchup in the jar and seal it.
