Electric Pressure Cooker?

I have had an electric pressure cooker for some time now and haven't used it yet. What I would like is a cookbook specifically for electric cookers; I don't understand all the bring to pressure, wait for jiggle, etc that the regular cookbooks have that have recipes for the older style pressure cookers.
Does such a book exist?


All pressure cookers work on the principle that heat generates steam in a closed cooking environment and that produces pressure. The electric models are basically pressure cookers on training wheels. They have some serious limitations when compared to the wide variety foods, recipes and cooking techniques that can be used with the new, modern stovetop pressure cookers available today, but that's the tradeoff for a digital timer.

Unlike today's modern pressure cooker, there are no standards for the digital controls each manufacturer installs to operate their appliance. Instructions vary widely with all the various makes and models on the market, so it would not be practical -- or profitable -- for a cookbook publisher to give detailed operating instructions one each and every one. So it's up to YOU, as the user, to know how to operate your particular model.

In general, use the BROWN setting for searing and sautéing. Instead of monitoring a pressure regulator (jiggle-top), or a visual pressure indicator on stovetop models, you to need program the cooker for HIGH PRESSURE and then set the timer. If the recipe calls for a quick release, use the corresponding mechanism on your appliance. Natural release means to turn off the heat and wait until the pressure drops on its own. Use the BROWN setting to do any finish cooking after pressure is released and the lid is removed.

You can adapt many regular recipes and standard pressure cooker recipes for use in electric models, but be aware that there are limitations that can affect the outcome. Most importantly, most electric pressure cooker units fall short of the standard 15psi pressure setting. This means you'll need to compensate by increasing the cooking time, but that defeats the whole purpose of pressure cookery. Of course, you can't use the cold water release method, so that eliminates foods like tender-crisp, fresh veggies. The electrics take longer to pressurize and depressurize which can lead to scorching problems. As a result, they tend loose more liquids to venting so you'll need to increase the minimal amount (which is only 1/2 cup for modern stovetops) to make up the difference.

Once you understand your owner's manual and how to use your appliance, you can try recipes for braises, stews, soups and steam roasting, all of which should work well in your electric model with only minor adjustments.

How long should it take for an electric pressure cooker to come to pressure?

We recently bought a Wolfgang Puck electric pressure cooker from HSN. It take about 30 minutes to come to pressure and begin cooking anything. Is this normal?


I have always had a pressure cooker and the answer to ypur question is yes it it normal, It depends how much food & liquid is in it, as an example, if you have a cup of liquid and half of the cooker with food it might get up to pressure in about 15 min,when I make stuffed cabbage full to the top with 4 cups of liquid it takes 30 min to heat up the mass in the pot,remember that the inside has to get to boiling before it can reach pressure. (remember not to block the vent hole in the center of the cap.)

Where can I get an electric pressure cooker in Okinawa Japan?

I'm Japanese and lives in Okinawa. I want to buy an electric pressure cooker, but I don't like the design of those Japanese company produces. I checked Amazon, and found a cuizinart one, but they don't send things overseas.

(I do intuit the need to tell you up front that this post is waaaaaay over my normal , self imposed 500 consultation limit. Read at your leisure. Or not. It is intended to be a humorous peak into the mundane workings of my individual; I hope you enjoy and get a laugh or two out of it.)

My dear brother, Lucas, is studying to be a chef. I talked with him about my struggles with cooking in the altitude. He told me to get a pressure cooker. Those things that storm?!? They are a bit more sophisticated than in the olden days, I have come to find out. Last week my friend lent me one of hers to give it a try. She gave me a in a nutshell Bermuda shorts orientation and a superb demonstration on the use of this wonderment with her smaller one. I was leery but wanted to see this miracle pot in liveliness under the power of my own hand.

This is a non-electric, heavy-duty pot with a special top. The lid has a rubber ring under the toothed lip allowing it to pin and screw on to the actual pot. So while at her house I managed to get the top sealed on for easy transport to my as a gift. But when I got home, all excited to show my husband my new toy, the top would not come off! We pried, and pulled, and pushed, and tugged at that fetich all day; when the hammer was suggested I drew the line. I said, we will let it sit overnight and hope that in the morning with the swop in the temperature of the air it would be easier to get off.

I woke up with the Rocky theme running through my head. Clapping my hands together and rubbing them I stared at the pot and told it to get given (out loud!). I grabbed the contraption and with controlled steady force popped that bugger liberty off! Never underestimate the power of a woman who has birthed four children and has a good nights saw wood under her belt.

To cook! Yes, I was ready. The pot and I had come to terms and we both knew who was boss. I stony to go with mashed potatoes for my first try. Washed, peeled, chopped, tossed in and doused with branch water I sealed the potatoes in and lit my stovetop with a match. Of course I had terrible visions of having to bring the pot to my friend with a lump of mushy smelly potatoes inside because I dreaded having top troubles again. So I stood there watching the pot. All of a hasty the spiggit on the top started to steam and rattle. That is what it is supposed to do - now we are cookin’ with gas (faithfully)! So I am supposed to time it from the time it starts spitting. But how long?!? I let five grueling minutes go by and obvious to make a panicked call my friend who happened to be at the beauty shop. Between hysterically laughing at my vertiginous anxiety over my potatoes I got her to tell me five minutes - but 7 had passed by this time! Ah!!! She told me to fill me fail with cold water and submerge the pot then check them. Submerging initiated and commenced I stared at the manoeuvre again ready to gear up for another WWF match. Turns out there was no need to worry - it slid right off! Whew!
