I found two steamer inserts on ebay and they both say that they will fit a 6 qt, but are different diameters.
how is the Tfal steamer insert supposed to be used?

not the Emeril contraption but the steamer insert that opens up in a spiral of sorts that came with the set of pots and pans.
I have one of those. It's nice because it fits in most pans. You put it in a pan, fill the pan with water, just up to the bottom of the steamer. Put in the food, cover the pan and bring the water to a boil. If you are making something big, like artichokes, you can remove the pole with the ring on it. Also make sure you don't run out of water in the pan. You can add more water at any time. Just pour it in from a cup or something.

Can canning jars be simmered for a couple of hours?
Dec 22, 2008 by No, You Don't Know Me | Posted in Cooking & Recipes
I'm making tamales. I have a bamboo steamer, but no small pot to set it on, but I have a big pot to put it IN. I need to lift it up off the bottom of the pot and wondered if I put 2 canning jars in there (on their sides, not bottoms) and set the steamer on top of them, would the jars break during the 1.5 hours the tamales are supposed to steam? Whaddya think?
I don't see why they wouldn't be acceptable, although I might add that you might want to use three, as it will add more stability than two will.....Remember, canning jars are meant to withstand pressure canning as well as "hot bath" methods, too, so they should stand up to long steaming in boiling water without any problem whatsoever....Enjoy your tamales!!! Happy Holidays.........

Most efficient stove top steamer -- cost wise.?
Dec 06, 2008 by Avraham | Posted in Other - Home & Garden
Hello everyone,
What would be the most efficient pot for steaming vegetables on the stove top? Would it be a stock pot fitted with a steamer, a wok fitted with a steamer, or any other suggestion (besides anything that requires it to be plugged in, because I'm looking for a stove top method of steaming).
Thanks very much,
Av

Cedar-Smoked Mayonnaise
I wanted a mayo condiment for a tuna dish I was making (see later support). I had some cedar chips, and had been thinking a lot about smoked food lately, so I absolute to try making a smoked mayonnaise. This was a tricky proposition. Mayo is an oil-in-water emulsion, and can be temperature-vulnerable; raising the temperature to high can cause homemade mayo to break down. But I gave it a markswoman.
I made some mayo using an egg white and slowly drizzling in peanut oil. Once I had a nice extent of emulsified mayo, it was time for the smoking. I'd already smoked a handful of cedar chips in unstintingly. I drained them and put them in the bottom of a big pot. I got them smoking over a high flame, then turned the heat down, added a steamer basket to pot, then put the metal move of mayo directly onto the steamer basket. I closed the lid of the pot and let the smoke infuse the mayo. After two or three minutes, there was piles of smoke, so I turned off the heat and let the chips smolder. I didn't want it to get too hot in the pot, lest the emulsion prepare. Finally, I brought the pot outside so as to keep the house from getting smoky as the smoke escaped scant by little.
After around fifteen minutes, I tasted the mayo and decided it could use a bit more smokiness. I gave it a stir and added the lid again. The chips were still smoking reasonable fine. I left it for another ten minutes then tasted it again. It was perfect, with a nice smokiness, and that definite piney cedar flavor. Delicious. I put it in a squeeze bottle and used it with yellowfin tuna, cucumber, and soy sauciness. The rich, fatty, smokiness of the mayo was the perfect accompaniment to the raw fish and unsympathetic cucumber. Mmmm.
No pictures. It just looks like mayo.
